Friday morning breakfast at the Duggers

Hey everybody, look what James, Brody, Travis and Heather all had for breakfast. We cooked up some scrambled eggs in one pan, and in the other, a mixture of turkey sausage, spinach, garlic, mushrooms and sliced almonds. It was real good.

A Recipe for Pumpkin and Chicken Curry

  • 2 chicken breasts (sliced into strips)
  • 5 cups pumpkin (diced)
  • 2 tbsp olive oil
  • 1 onion (diced)
  • 2 garlic cloves (finely chopped)
  • 2 tbsp ground ginger
  • 1 tbsp ground turmeric
  • 2 tbsp ground coriander
  • 2 tbsp ground cumin
  • 1.5 cups vegetable stock
  • 1 bunch fresh coriander (chopped)
Fry onion and garlic in a large pan with oil on medium heat for 2 minutes. Add chicken and cook, stirring constantly until chicken has turned white. Add pumpkin, ginger, turmeric, coriander and cumin, then stir for 1 minute. Add stock and let simmer on low for 15 minutes. Add chopped coriander, then cover pan and cook for another 2 minutes. Season with sea salt.

Paleo Mayonnaise

  • 1 whole egg
  • 1 tbsp lemon juice
  • 1/4 tsp dry mustard
  • 1/2 cup olive oil
  • 1/2 cup flax seed oil
Put egg, lemon juice and mustard in blender and blend for 3-5 seconds. Continue blending and slowly add oils. Blend until the mayonnaise is thick. Scrape mayonnaise into a snap lock plastic container and refrigerate. The Mayonnaise should keep for 5-7 days.

A sea scallop recipe for ya'll to try out

  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 1 garlic clove, crushed
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp sea salt
  • 1/8 tsp cayenne pepper
  • 1 lb sea scallops
Whisk ingredients together in small bowl to create marinade. Combine marinade and scallops, then stick in fridge for 30 minutes. Probably be a good idea to throw a salad together while waiting for the scallops to marinate. Cook scallops in a large skillet over medium heat for 2-3 minutes per side. Serves 4

Egg Cupcakes

I got this recipe from CrossFit NorCal's website. Haven't tried it yet, but it sounds good. I plan on cooking it up real soon.
  • 10-12 eggs
  • 6-8 slices of cooked bacon, crumbled
  • 2 zucchini/squash, grated
  • 1 red onion, grated
  • 1/4 cup sun dried tomato, diced
  • Salt and pepper, garlic salt

Preheat the oven to 350 degrees. Grease your muffin cups (the silicone type seems to work best). Using a box grater, grate the zuchinni and red onion. Whisk your eggs until blended and then add the grated veggies, bacon, and sun dried tomato. Season to your liking. Using a measuring cup, scoop about 1/4 cup of the egg mixture into each prepared muffin cup. Bake for 20-25 minutes, or until egg is set in middle.

Colleen's Nutty Snack Mix

Hey all you crossfitters as well as friends of crossfitters, ya'll need to check out this nut and seed mix. So far, everyone that has tried it can't get enough of it. I'm selling it by the pound for $6. The only naughty thing about it is a touch of honey. Just don't eat a whole bag in one day and you should be fine. Let me know if you want some and I will get started on a batch for ya.
