Egg Cupcakes
I got this recipe from CrossFit NorCal's website. Haven't tried it yet, but it sounds good. I plan on cooking it up real soon.
- 10-12 eggs
- 6-8 slices of cooked bacon, crumbled
- 2 zucchini/squash, grated
- 1 red onion, grated
- 1/4 cup sun dried tomato, diced
- Salt and pepper, garlic salt
Preheat the oven to 350 degrees. Grease your muffin cups (the silicone type seems to work best). Using a box grater, grate the zuchinni and red onion. Whisk your eggs until blended and then add the grated veggies, bacon, and sun dried tomato. Season to your liking. Using a measuring cup, scoop about 1/4 cup of the egg mixture into each prepared muffin cup. Bake for 20-25 minutes, or until egg is set in middle.

Nutty Snack Mix
If any of you crossfitters want to order some of the nut & seed mix, just email your orders to paleojames@gmx.com. I had to raise the price a little, but not too much. $7 for 1 bag / $13 for 2 bags. Thanks for all the orders so far, I'm glad everyone likes the stuff.

Colleen's Nutty Snack Mix
Hey all you crossfitters as well as friends of crossfitters, ya'll need to check out this nut and seed mix. So far, everyone that has tried it can't get enough of it. I'm selling it by the pound for $6. The only naughty thing about it is a touch of honey. Just don't eat a whole bag in one day and you should be fine. Let me know if you want some and I will get started on a batch for ya.
